Hi Ashlan, there are lots of ways to create and maintain a sourdough starter, so there's no need to start over or change what you're doing if it's working well for you. The 1:1 ratio of ingredients in our starter is by weight, so I don't think you're too far off from that anyway. We're not big fans of the float test when it comes to guaging sourdough starter maturity or ripeness, so I wouldn't worry about that. Look for your starter to rise predictably after a feeding, and to have a pleasant aroma. Good luck and let us know how it goes!
