Hi Jack, glad to hear your starter responded well to the alternative feeding plan, and congratulations on the baby-on-the-way! Once your starter is rising predictably with the twice a day feedings with AP flour, then you should be good to start baking and/or storing the starter in your refrigerator. Whenever you change its feeding routine the starter will need time to adjust before it responds predictably. Unfortunately, I don't have a definite amount of time this will take. I'm hoping it will only be a few days, and that your starter will be up and running before you baby arrives! Once you start storing your starter in the refrigerator you should try to feed it at least once a week. Be sure to allow it 2-4 hours at room temperature so that it starts bubbling and fermenting before you return it to the refrigerator.
