Hi Barb, I too created a sourdough starter using the KAF directions. I didn't pay enough attention to proportions and by day 7 or 8 I had hooch collecting on top. So I read through your blog and saw your post with revival instructions to feed once a day with whole wheat flour in a proportion of 2 parts starter to 1 part WWF and water. This worked like a charm! By day 3 and 4, the starter was bubbling and doubling in rise. Woo hoo! So I followed your instructions and switched back to 1:1:1: twice-daily feedings of starter, AP flour, and water (113g ea) on day 5. I'm on day 7 now, and with each day of the twice-daily feedings, it rises less and less. It's still rising, but not nearly so much. Maybe 25%. Is this OK, or should I switch back to WWF? What should my expectations be? It's winter here in Maryland, so my house isn't super-warm (68 deg F), but I'm keeping the starter in the microwave, which is above the oven and a little warmer. When can I try to bake a loaf of sourdough and what KAF recipe should I use. I'm totally new to bread baking. Thank you!
