Hi Pat, your starter will be just fine! Although feeding at least once a week will help maintain the health of your starter, it's a resilient creature and can handle much longer in the refrigerator if you happen to forget it! When you take it out of the refrigerator after a period of forgetfulness, be sure to give it a day or two of twice a day feedings at room temperature to help restore its vitality. Once it's doubling in size in 6-8 hours, it should be ready to use in your sourdough bread baking!
