Hi Ashley, I'm hoping by now that your starter is rising nicely, but if you're still experiencing issues please give me a call at the Baker's Hotline (855-371-2253) and we can strategize about next steps. I'm thinking it might be worth trying the 2:1:1 ratio of starter to flour and water, and switch to once a day feedings with whole wheat flour until you start seeing a more significant rise.
