Thank you for the reply, Barbara! I live in upstate NY, and my kitchen is quite chilly (~65 degrees). I have been equally surprised with what is going on. I thought I had accidentally pulled out a container of discard from the fridge at first, but I am sure that this is my starter. I will try to start to implement a twice daily feeding. What are your thoughts about feeding it at a 2:1:1 ratio? I read through the comments on this post and the other troubleshooting post, and wondered if that approach would be helpful. The development of the hooch is pretty minimal - it isn't liquidy, more just a grey layer. Another thought that I have had is water hardness. I just moved and I have noticed that the water in my complex is hard. I have always (except when I first started my starter) used Brita-filtered tap water, which I have continued to do. Could that be causing this?
