My new starter is now on day 7 and is bubbling and rising to about double its volume with each feeding. However, it does not have much aroma. Basically, it smells like dough, with no acidic or sour smell at all. I have tried substituting some whole wheat flour for white flour in the feedings (about 1/4), but still no smell. Should I try some rye flour or just not worry? Thanks.
