Just call me lazy ole Steve. After nearly 40 years finally baking decent bread (used to be hockey pucks). Not being able to stand success (by the way Arthur is definitely the king” I decided to try sour dough after failure in my primitive period. But lazy and stubborn I have had great success, early (within 48 hours, can’t wait either) by taking about a quarter of my next breads dough and putting it in a jar with cheese cloth cover (cowboy style). Two days later I put all that will pour, plop or plummet into my next bread! I reserve about a quarter back into my saddle bag from the new bread and so on and so forth. It works!
