Thank you for these articles! I have been baking with sourdough since the 70s. The only ways I have killed sourdough was to drop a glass container of it on a brick floor or forget to take out my cup of starter before I made my recipe. I keep my starter in the refrigerator when not in use in an unbreakable container (but not airtight). I am now using King Arthur starter and have converted some of my recipes to use in my old model Zojirushi bread machine, also from King Arthur. Sourdough makes the most velvety sandwich or toast bread and keeps longer. Happy baking!
