I used to be a dab hand at making a starter, but I let it go for a while and now I'm re-trying. My starters keep getting mouldy within the first week despite sterilising everything beforehand and doing all the normal things (equal weight of bread flour and water, every 24 hours).
This time there's no mould and despite an excellent rise on day 2 so I discarded half as my jar isn't very big and re-fed, however from this point it stopped rising and immediately started producing hooch almost straight after feeding. So I've tried feeding it a bit more than usual, but still I'm just stuck with hooch producing starter at day 4. Any advice?
