Hi Gay, if my starter has been stored in the refrigerator for several days or a week, I generally feed it straight from the refrigerator, as adding room temperature flour and water will help to warm it up. However, if you happened to have fed your starter the day before and stuck it in the refrigerator before it fully ripened, it might not need to be fed right away when it comes out. In this case, allowing the starter to warm up and rise to its peak might be preferrable to offering it another feeding right away.
