Hi Barb, yes, you'll want to discard some starter with each feeding. Our starter maintenance routine consists of equal parts by weight of starter, water and flour (1:1:1), and your twice a day feedings will look like this: 1/2 cup (113g) starter + 1/2 cup (113g) water + 1 scant cup (113g) Unbleached All-Purpose flour. If you're worried about using up too much flour trying to revive your starter, you could also consider doing a smaller version of this routine, which fits nicely in an 8-ounce wide mouth canning jar. When your starter is lively and ready to bake again, it's easy to build the quantity of starter you'll need for baking.
