I would add, maybe it will be helpful to someone, you can smell your starter and know what is wrong or if it's doing well. Healty starter has a mild vinegary doughy smell; hungry starter is indicated by the alcohol smell; moldy starter reminds me of a mild moldy cheese, not as strong odour as cheese. The first stages of making a new starter it will have these strange smells going on, don't worry, the bad bacterias are in the war with the good ones, that's also why it's very very bubbly at the beginning and why the smells vary and why you shouldn't get your starter hungry at those stages, it's fighting a fight and need the energy. But after 7-10 days, you should expect the mild vinegary smell, once you get to know it, you can always tell the health of your starter (unless you have some disability with your smell especially after covid, in that case, you can detect everything by eyes also just by following this great article were on :)).
