I have had my sourdough starter for 2 weeks now and barely see a rise and fall. I’m using King Arthur bread and whole wheat flours. I feed every 12 hours 25g starter, 30g whole wheat, 20g bread, and 50g water. I tried adding a little more water since it was super thick. I see some bubbles on top and on the sides, but no rise and fall. I don’t know if I should let it go for 24 hours and see if I’m just interrupting its feeding, or if my feeding measurements are off. I keep it at 78 degrees in a bread proofer.
