My starter has been performing well for 3 years having been well fed. Between loaves I refrigerate the starter to preserve its strength between uses. Before fridging it, I let the starter begin rising to assure it is happy. Recently, however, when I take it out of the fridge, to bake a loaf, it dosent rise.
To get it to rise, I have to refeed it at room temperature. What causes the lack of rising out of the refrigerator?
