I have a mature starter. I keep a reserve (original starter, unbleached AP flour only) in the fridge that I feed weekly and a separate jar that I feed and use every day. I experiment with the second (e.g. what changes in the flavor profile if I use some rye flour, etc), knowing I have the reserve as back up. I recently went about a month without feeding either (both kept in the fridge). I went to feed both and they both had hooch. The daily jar had a sickly sweet smell to, so I tossed it. The reserve starter smelled fine, was thin and runny, so I stirred the hooch in and have been feeding it 2x per day for a couple days now. It gets bubbly but does not rise much. It also has a little hooch each time I go to feed it. How do I get it healthy again? I feed 1:1:1.
