I have a question....I have printed your material on sourdough starter. In one place under "Troubleshooting your starter" it says that if your started has developed a thick layer of liquid on top you should "stir the liquid back into the starter..." Then in another place (on the first page of "Sourdough Starter") under resuscitating a neglected starter it says that if your starter develops "a thick layer of liquid on top ... If this happens pour off most of the liquid". Which is it stir the liquid in or pour it off???
