Hi Cristian, I apologize for the delay in responding to your question! I have noticed during the early days of starter development that liquid can sometimes collect on the bottom or middle rather than on top, but I don't think you need to be too concerned about this. By now you should be a few more days along in the process and hopefully the starter is beginning to bubble and rise and isn't separating out in this way. If your starter doesn't seem to be progressing, please don't hesitate to give our Baker's Hotline a call at 855-371-BAKE (2253).
