I'm just a couple days short of a month into my starter. I feed it twice a day (12 hrs), a 1:1:1 ratio. I'm using a quart Mason jar. I started with KA rye flour and after 2 weeks switched to KA all purpose. Our house is in the mid 70°s. We have well water, so no chlorine or anything. When I was using the rye it seemed to be doing better, but since switching to the AP it barely rises. Maybe 10% in a 12 hour period. I cannot figure out why I can't get it to rise. I have yet to even try to make bread and it's getting disheartening... any ideas?
