Hi Dodie, can you give me a little more information about your starter and the process you've been following? Are you following our sourdough starter recipe? If so, what day are you on, and are you feeding by weight or by cups? What type of container do you have it stored in? It can be difficult to see the type of doubling behavior we refer to if you happen to have your starter stored in a wide bowl or Tupperware container. For our starter amount and feeding routine, a clear quart size wide mouth canning jar that is taller than it is wide works best for viewing the rise. What you're looking for is the starter to predictably double in volume about 6-8 hours after you feed it as a good sign that it's ready to start leavening your bread. However, if you're following another starter routine, you may not see the same type of rising behavior.
