Hi Barb, thank you for putting together this informative post. I wonder if you could help or shed some light on what is going on with my my first starter:
I started it using 60g whole wheat and 60g warm water on May 23rd (Day 1). Feeding it from May 24th (Day 2) using 60g all purpose 60g water and discarding half of the starter every 24 hours, it appeared to be doing very well, rising a lot (double and more) with a good spongy/marshmallow-y texture. By May 28th (Day 6) I transferred the starter into a larger jar and continued with the same feedings (60g all purpose flour and 60g water). On May 30th (Day 8) the starter did not rise at all and the texture was runny, with some small bubbles on the surface (is this some activity?) but no layer of hooch. Assuming the starter was 'extra hungry' due to the runny/watery consistency, on May 31st (Day 9) I fed it 3 times with the same amounts (60g all purpose flour, 60g water) hoping it would perk up (0930, 1540, 2220). Today June 01st (Day 10) it hasn't shown any improvement? The texture remains runny and not spongy like in the first 6 days. I plan to feed it just twice today (1030, 2230). Has the started died? Do I need to start all over again? Or should I persevere?
