Hi Keith, It's very common for starters to work through some unpleasant odors during the early days of starter development. I wouldn't recommend using the discard in your baking until the starter is smelling more appetizing, but I wouldn't worry about it at this point. As the starter becomes more stable and is rising consistently, it will weed out the manure smell and associated bacteria.
