I'd imagine you get a lot of comments like, my young starter smells like... Well, here's another. I just started it 4 days ago, for the first two days I started it with 100 grams of organic dark rye and 150 grams of spring water. Before I started this starter, the rye while dry, smelled a bit grassy maybe, a tiny bit sweet. After adding the water, the smell grew more intense, like fresh cut grass or hay. Day three and four, I discard all but 75 grams of starter and add 35 grams of the dark rye, 35 grams of all purpose and 75 grams of purified/spring water, and now it still smells pungent and grassy, but with a hint of maybe something that smells like manure. By the time cultivation is over, I will only be feeding it all purpose flour, so eventually the amount of rye in it will be negligible. So my question is, is this natural, and either way, is it safe?
