Hi Debbie, we're so glad to hear your first sourdough bread attempt was successful! The yeast in the Rustic Sourdough Bread recipe hastens the pace of this recipe and doesn't allow quite as much time for flavor development, so you may find you get more sour flavor when you bake a recipe that doesn't have added yeast.
