I just baked my very first rustic sourdough from your recipe and your starter. I followed the instructions in your booklet. Everything was going well. My end product was on the light side and tasted really good, but I would like it to taste a little more sour. How can I accomplish that?

I am refrigerating my starter and have marked my calendar to remind me to feed it as I will bake a loaf a week.
