My sour dough starter was bubbling away doing quite well left it overnight to double after feeding. Unfortunately could not bake the following morning, so in the afternoon it kind of deflated from early in the morning state which was quite doubled. Making the test in cold water it still floats but is it ready for baking as it has deflated quit down considerably.
