Hi Joan, it sounds like you've invested a lot of time and flour into this new starter, so I wouldn't give up on it yet! The fact that it is rising (even a little) and the aroma has improved somewhat are both good signs. I would urge you to continue your twice a day feedings at room temperature (even if your home is a little cool at night), and consider maintaining a smaller starter (at least until your starter begins doubling predictably). Our smaller starter routine calls for twice a day feedings that consist of only 20g starter + 20g water +20g flour, and this size starter will fit nicely in an 8-ounce canning jar or jelly jar. Once your starter is rising well it will be easy to convert back to the regular size starter and begin your sourdough bread baking!
