Hi Donna, hooch is primarily composed of sourdough waste products and isn't vital for your starter's health. I generally stir it in if it is clear, but if it gets really dark and unpleasant looking I pour it off. My philosophy is that whatever flavor it might impart at that point isn't likely to be very appetizing.
