Hi Barb, and thanks for this resource! I have a layer of black hooch on my starter, and have read your information, but a question arose when I saw a comment on another site. It said to pour off the hooch, not to stir it in. Wouldn't it be better, and increase the "sour" flavor, if I stirred it in?
