Thanks for your detailed reply! I have a mature starter -- handed down through friends from starter obtained at the King Arthur in NH. I keep it in the frig. Once a week I take out 1/3 cup of starter and put it in a clean mason jar, add 1/3 cup whole wheat flour, and 1/3 cup (or a little more) of water. Then I put it back in the frig. It's active, and gets bubbles. But, as I said, hooch forms on top within a day. Sounds like I need to get a scale and adjust the proportions. Maybe I need to feed it more than once a week.
