I just started my sourdough starter Saturday. I'm leaving town for 5 days on Wednesday. The last feeding I can do will be Wednesday morning and will return Sunday evening. Should I start over from scratch when I get back or continue to feed until I leave, put it in the fridge, and resume when I return? Thanks for your help!
