Hi Lisa, as long as you're not seeing any signs of mold or a pink or orange tinge or streak, then I think it's fine to continue. Skipping a day early on in the process isn't likely to cause any major issues, and may actually be helpful in terms of developing more acidity in the starter, although at least stirring it every day can help prevent mold from developing. However, if you happened to see a burst of activity on day 1 or 2 and now the starter isn't doing much, then you might want to continue feeding only once a day until the starter begins rising. Once it begins rising again, switch to twice a day feedings, which will help keep the yeast vigorous.
