Hi Marsha, mixing your starter with the paddle attachment on your stand mixer at the lowest speed shouldn't impede fermentation. You might try finding a warmer spot for your starter to dwell (75-80F) and see if this improves its activity level. It's not uncommon for this process to take longer than the times indicated in our recipe, but I would expect to see at least some bubbling going on at this point. If you're worried about using up too much flour during the creation phase, you might want to consider maintaining a smaller starter, at least until your starter begins rising predictably. Our smaller starter recipe is maintained at only 60g, and fits nicely in an 8-ounce canning or jelly jar.
