I doubt you did any harm to your starter if you fed it on day two, but it's fine to feed only once a day until your starter begins to rise predictably (more than once). Once the yeast kicks in it will benefit from more frequent feedings, so be sure to begin twice a day feedings at that point. If you're feeding only once a day at the beginning, try to give your starter a thorough stir at least once a day. Disrupting the surface of the starter can help prevent mold from developing when the starter is still in the creation stage, and less resistant than a mature starter to such contaminants.
