Hi Michael, the liquid on the top is "hooch," which is largely made up of sourdough waste products, including alcohol. It can get dark when the starter has been neglected for an extended time, but I'm a little surprised that this is happening so quickly with your starter.  I generally pour it off when it gets very dark, but it won't hurt if you'd prefer to stir it in.
