Hello,
I'm a novice with sourdough starter and can use some troubleshooting and suggestions.
I started my starter 9 days ago. It's looking healthy, but at this point, after 2 feedings, discarding and topping up with 113 grams of unbleached flour and 113 grams of water, I'm not seeing a doubling in the rise. It has several small bubbles, no funky smell, and no odd discoloration. I'm making sure the water is right temp...85. I'm not using King Arthur flour...I live in Canada, so I'm using our Robinhood Canadian flour.
Do I keep going this way, or do you have suggestions as to what I can do to get this starter to double in size and begin to see more active bubbles?
