Hi Sara, normally when you're maintaining your starter at room temperature you need to feed it twice daily in order to keep the yeast activity vigorous. Allowing the starter to fall significantly between feedings tends to lead to sluggish yeast behavior. If you left your starter out at room temperature without feeding it for two days, this would definitely lead to a slow rise. Even if you had your starter stored in the refrigertor during this time, it may need a feeding or two to get it nice and active again. In any case, I doubt very much that your 1:2:2 feeding caused the issue you're experiencing, and I would expect that a day or two of twice a day feedings at room temperature should get your starter rising like a champ once again.
