Hi Cheryl, I'm sorry I wasn't able to respond to your question in a more timely fashion! It's unclear to me where you are in the sourdough creation process, or if your starter has ever risen predictably. The fact that it isn't bubbling is concerning, because even a rather new sourdough starter (after day 2 or 3) should show some bubbling behavior, even if it isn't yet rising. A starter that isn't rising predictably after a feeding isn't going to be able to contribute any rising power to your bread recipe, so it's not surprising that your bread attempts aren't yet rising well. You might want to consider starting over and trying a different sourdough starter recipe that uses up very little flour during the initial part of the process. Once this starter is rising predictably, you can always gradually transition to our recipe, if you so choose.
