If this isn't the case, I would still encourage you to be patient, since bubbles and a good aroma are both healthy signs of a developing starter. As far as consistency goes, I'm wondering if you are feeding 1:1:1 by volume or by weight? For our starter recipe, we recommend 1:1:1 by weight, which will give you a starter that is thick and pasty right after feeding, but will change in consistency as it rises and ferments to that of a thick pancake batter. If you happen to be feeding 1:1:1 by volume, this will result in a much thinner starter consistency that will have a more difficult time displayting the type of rising and doubling behavior we describe.
