I have a mature starter that's several months old. I had left to out, covered, on the sink for about a week or so without feeding. Then placed it in the refrigerator. When I took it out to get it active, I noticed a thin bit of liquid on top, which I understand is not an issue. But there was also some dark spots floating. I removed the top layer and saw nothing below the the liquid layer. I fed the starter and it doubled after about 8-9 hours. Is it safe or should it be discarded?
