Hi Kaitlin, I've never heard of a sourdough starter composed of just water and flour looking quite like a SCOBY. If it happened to have been stored in a very cold refrigerator, it's possible some of the hooch froze up a bit, but I don't know how else to explain the clear hunks you noticed. Since you obviously have some knowledge of making kombucha with SCOBY and may have some present in other containers in your fridge, I suppose it's possible these organisms have migrated to your sourdough starter container (maybe through shared utensils?). I'm stretching my imagination here, but, as usual, the best remedy is likely to be feeding your starter twice a day at room temperature for a few days and look for it to return to its normal rising behavior, odor, and appearance.
