Hello! I made a starter about three years ago. Since then, I've been making fantastic loaves on and off every week or every other week. While I haven't noticed a significant change in the smell, consistency, or coloring of the starter, the last several loaves I've made simply haven't been rising. When I feed the starter he still develops bubbles so there is something going on in there - but it doesn't appear to be turning out the same results!

Because of the frequency in which I make bread I typically don't do a feed / discard. It's not unusual to see a bit of hooch before making a loaf of bread but I haven't seen any streaks or mold on it. Any tips on how to get him going again would be much appreciated!!
