Hi Jeff, I have had a few bakers report purple streaks within the body of their starter, and have also consulted microbiologist, Debra Wink, about this type of occurrence. She's not sure what is causing the purple coloration, but believes that if the starter is otherwise rising well and smelling good, then it should be perfectly safe to use. As always, a few days of twice a day feedings at room temperature (once in the morning and once in the evening) will do much to restore the overall health and activity level of your starter, so I would recommend a little extra attention. As long as your starter is rising predictably and has a pleasant aroma, then you should be fine to proceed, with or without the purple colored areas.
