I have been making and using sourdough starter for close to 50 years. It has been very successful, and very rarely have I had any problems until three or four years ago. Then, for no apparent reason, I started losing every one I started. We’ve lived in the same house for 40 years, but this locale seems to make a sweet sourdough and I haven’t been out of the city to start some new in a few years. I’ve tried several different methods and none have worked. Any suggestions? I’ve tried yeast, yogurt, milk, water, AP of different brands, and freshly milled whole wheat. I always use a glass jar. I’m currently trying the whole wheat and water.
