Hi Hannah, you're very welcome! I think it's fine to continue with the spelt flour rather than switching to whole wheat, and just shift to the 2:1:1 ratio and once a day feeding until your starter begins to rise. This sounds like a good plan, so try to be patient and let the organisms do their thing. As long as your starter is bubbling, you're headed in the right direction.
