My sourdough starter does not smell sour anymore. It is plenty yeasty enough to create a nice loaf of bread. I keep the starter in the refrigerator and feed it the only when I bake bread about once a week. Usually I feed it at 100% hydration level using KAF bread flour. Any suggestions to get the tang back in the my starter?
