Hi Barb, Thanks for your continued interest.

Well, I thought I was all set. For a few weeks my starter was more than doubling at about 5 hours while I gradually weaned it off whole wheat. I got down to 90% white on Thursday - still doubling plus a bit. Finally went to all white (KA unbleached) on Friday, got a lesser rise but almost okay. Overnight to today (Saturday) still less rise. Feed this morning, minuscule rise after 5 hours, let it sit for 4 hours more but it hasn't grown. I can only assume it will not rise at the next all white feeding.

It seems impossible to transition to all white flour. Any advice?

One last thing, for the last few days I fed it 2x everyday - when it was at its peak, then late night feeding for overnight. Not sure if that's relevant.
