I have had my starter going several weeks. It was doing really well. It passed the float test and I made a loaf of bread which was a dismal failure. I have now had it working again for some time but now it will not float no matter how often I feed it. Again it is working beautifully. So why won’t it float? If I use it anyway will the bread be any good.
