Hi Tabi, it does sound like your starter would benefit from more frequent feedings, but there's no need to start over. Ideally you want to feed your starter when it's at its peak of rising, or just beginning to fall, which will keep yeast activity vigorous. Allowing the starter to fall significantly between feedings can lead to sluggish yeast behavior, and may also be contributing to the nail polish aroma you've noticed. I would try feeding twice a day and aim to feed close to the peak. I'm hopeful that the aroma of your starter will improve after a few days of such treatment.
