Hi! I'm on day 11 of feeding my starter. It gets nice and bubbly and frothy, but I'm seeing very little rise definitely not doubling in size...more like 15 -25% rise usually 12 hours after feeding. I tried the float test today and it floats, but I'm not sure if it's ready because it's not doubling. Any advice would be appreciated!
Background on my starter: I'm following the KA recipe that calls for 113g of starter, flour, and water. I started with whole wheat, switched to KA unbleached all purpose, but wasn't seeing any reaction. On day 5 I started feeding with whole wheat flour to help development. It began rising (a little bit as noted above) and bubbling more after I made this switch. After a couple of days using whole wheat, I started incorporating more KA unbleached all purpose because I was running low on whole wheat. I'm in Southern California, and I generally keep the AC at about 75 degrees. I feed it twice a day using water temp between 80-90 degrees F.
